Black Garlic & Mushroom Omelette

A perfect way to start your day "Farmer-Style" with a delicious, and nutritious omelette!


Ingredients:

  • 2 Jumbo eggs

  • 2 large button mushrooms

  • 2 Tablespoon Avocado oil or Coconut oil

  • ⅓ cup of sliced onions

  • ½ pack of Enoki mushrooms

  • Food 4 Life black garlic cloves (2 to 3, or to taste)

  • ¼ teaspoon Food 4 Life BG-infused balsamic vinegar (substitute with Worcestershire sauce)

  • 2 Tablespoons Parmesan cheese (optional for garnishing)

  • Salt and pepper to taste.


Method:

  1. Peel 2 cloves of black garlic and slice 2 them thinly.

  2. Slice the button mushrooms. Cut out the roots of the Enoki mushrooms and separate the strands by hand

  3. Place the oil in a medium-high heat pan.

  4. Place the onions in the hot oil, then followed by the mushrooms, and stir around for a minute.

  5. Add the sliced black garlic into the sauteéd mushroom & onion mix, then add seasoning.

  6. When mushrooms have softened, remove from pan and save to side.

  7. Whisk eggs together in a small bowl with the balsamic vinegar and some seasoning; pour into the same pan over medium heat.

  8. When eggs no longer look runny, place the cooked mushroom mixture over half of the side.

  9. Gently fold the other half of the eggs over the mushroom mixture, and cook for another minute.

  10. Carefully remove the the omelette from pan.

  11. Sprinkle Parmesan over the top of the omelette. Serve with your artisanal baguette drizzled in olive oil and balsamic vinegar.

NOTE: Parmesan cheese could be added into the omelette before you folded it in half.


And there you have it — a simple and delicious omelette with a complex and interesting taste that will start your day with a smile!


NOTE: You can add sausages into the mushroom mix if you prefer more protein in your breakfast.
